Happy Fourth of July everyone! It has been a hectic week in our household so I am greatly enjoying this day off in the middle to rest and recuperate. So far my lazy morning has consisted of drinking two cups of earl grey, doing a little reading, and munching on these delicious muffins! The best part was that I baked this batch of muffins yesterday, which meant today I just rolled out of bed and had a big bowl of of these raspberry, blueberry muffins waiting for me.
Yesterday, when I brought these muffins in for the boys at Ray’s Wine and Spirits in Wauwatosa (where I started working not too long ago) I quickly realized that I should have made a double batch and brought more in. These tasty treats disappeared quite quickly. They are hardy muffins packed with oats, flax seed, and loaded with tons of plump, juicy blueberries. The best part is that I added in a bottle of Founders‘ tart and tasty new brew called Rübæus. I’m not exactly sure how to pronounce the name of the beer but I do know that it’s delicious. I’ve really enjoyed drinking Rubaeus and you can read my thoughts on it here.
So try baking a batch of these berrylicious muffins for your self, but remember that if you’re sharing them, they will vanish quickly. Have a safe and happy Fourth!
- 1 cup Flour
- 1 cup Whole Wheat Flour
- 1 cup Oats
- 2 tsp Baking Powder
- ½ tsp Baking Soda
- ½ tsp Salt
- ½ cup Brown Sugar
- ½ cup White Sugar
- 4 Tbsp Ground Flax Seed
- 2 Eggs
- 1-12oz Bottle of Beer
- ¼ cup Butter (melted)
- 1 cup Berries
- Preheat oven to 400 degrees. Grease 2-12 count muffin pans or use muffin cups.
- In a large bowl, combine oats and the beer, soaking them until the oats are soft.
- In a separate bowl, sift flour, sugar, baking powder, baking soda, salt, and flax together. Add in eggs and melted butter with the oats and beer, stirring them together. Mix in dry ingredients with the wet ingredients, be careful not to over stir. Fold the berries into the batter.
- Pour into muffin pan and bake for 15-20 minutes. They are done when golden brown around the edges. Let cool and enjoy with friends.
